Análisis bacteriológico y físico químico de leches pasteurizadas en el distrito especial de Bogotá

A bacteriological and chemical study was carried out in order to know the conditions of the pasteurized milk distributed and consumed in Bogotá. Thirty three plants were sampled. The chemical analysis included determination of density, volume, weight, fat, acidity, starch, phosphatase and peroxidase. The bacteriological analysis Included total count, conforms, most probable number and Staphylococcus sp.Results: 90.2% of the samples presented low density and did not agree with the official regulations: 82.66% showed less milk than the announced by the plant. The fat average was low 2.7%. Twenty four per cent of samples were acid because of the high bacterial content. The 17% of the milk examined showed evidence of overheating. Only 8% of the samples agreed with the official regulations; 40% were contaminated whlth the official regulations; 40% were contaminated with conforms and 10.6% were positive to E. coll from fecal origen.
