Chemical and microbiological characteristics of Ititu

Determines the microbiological and chemical composition of Ititu, a concentrated fermented milk utilized by pastoralists in Southern Ethiopia, using 20 Ititu samples randomly collected from individual households from Borana region and transported under refrigeration for analysis; chemical and microbial counts were performed as well as electrophoresis and amino acid analyses.
