Incidencia de Aspergillus produtores de micotoxinas em frutos e graos de café (Coffea arabica L.)

Coffee beverage is consumed worldwide, Brazil being the main producing and exporting country. There is a rigorous quality control of bean quality by importing countries as far as the presence of toxigenic fungi and mycotoxins are concerned. Some species of Aspergillus may produce mycotoxins in foods, which are secondary metabolites toxic to man and animals even in small concentrations. The objectives of this work were to identify the Aspergillus species which are associated with coffee and verify if those may present a risk to the safety of the product. Afla and ocratoxigenic species belonging to the genus Aspergillus were identified in naturally dried coffee cherries and during the storage in jute and polystyrene bags. A total of 11 isolates were identified, sever being different species of the genus Aspergillus distributed in Aspergillus flavus (50 isolates); A. niger (44); A. ochraceus (12); A. dimorphicus (2); A. foetidus (1); A. tamarii (1) and A. sydowii (1). The greatest number of isolates were notified in the last two days of fermentation/drying (20th and 22nd days), the incident species being A. ochraceus and A. niger, respectively. Aspergillus flavus was isolated throughout the drying period. Over storage, a greater number of species and isolates were observed in the samples stored in jute bags, from which were identified: A. flavus, A niger, A. dimorphicus; A. foetidus. A. flavus was notified in the polystyrene bags. The toxigenic potential of fungi showed that all the isolates of A. flavus were producers of aflatoxins B1 and B2, no isolate of A niger was producer of ocratoxin A and 75 percent of the isolates of A. ochraceus were producers of ochratoxin A.
