Evaluación de la actividad de enzimas del grupo de las fenoloxidasas en pulpa del camote (Ipomoea batatas)

For the purpose of evaluating the enzymatic action of the phenol oxidase and polyphenol groups in sweet potato pulp, a suitable method was sought which would not involve very complex laboratory techniques. After testing, the following techniques were established cylinders of sweet potato tissues were extracted by the tubercle transversal line direction and 60 discs cut. After being weighed, 30 discs were in the test. They were placed into Erlenmeyer flasks containing 25ml of destiled water, 5ml of a 1,0 per cent solution of phenol in water, and 2 drops of satured HhCl2 solution in water. The other 30 discs, after being weighed, were the control samples, and were put into test tubes (17mm x 175mm) which had the same quantities of the Erlenmeyer solutions. The control samples sealed with paraffin and both tests incubated for 24 hours at 30C, filtered and read at 450nm or by means of a Klett-Summerson colorimeter using a blue filter.
