A study of some quality aspects of crude palm oil. The stabilisation of crude palm oil at the mill

Iron and copper are known pro-oxidants in vegetable oils and their removal is essential in order to obtain good oxidative stability. This study discusses the means of removing these trace elements from crude palm oil and shows that they are associated with the phosphorus content as in soybean oil. Phosphoric acid degumming was found to remove most of these elements in crude palm oil and this therefore bestows good oxidation stability and bleached colour. This process was compared with the stabilising effects of some metal chelating agents and antioxidants in crude palm oil
