Consumption patterns and implications for production and trade

The purpose of the paper is to describe the main patterns and trends of food consumption in the Region and its relation with changes in the production and distribution structure of the food system. A very brief introduction describing the trends in food availability for each of the countries in the region bas been included, since it is with this situation in the background that the considerations about the patterns of food consumption should be considered. The first section contains the analysis of food consumption patterns and the second examines the main characteristics and trends of change in the structure of the food system, in as far as they will influence in the process of change of the patterns of consumption themselves.
