The purpose of this paper was to use the theory of esquential likelihood ratio tests - s.l.r. tests - in order to develop inspection schedules referring to the percentage of insect damaged coffee beans. Having presented the main results available for s.l.r. tests we considered in detail the case of percentual variables. This study enabled us to develop the theoretical basis on which sampling schedules should rest. Our paper also includes numerical tables which describe the operational properties of sampling schedules constructed under several assumptions concerning the values of the misclassification errors, as well as a description of the way it is applied by I.C.A.
